Restaurant Carcasse
Have you ever been in a restaurant where you can see the whole meat hunk, where your steak on your plate is from? No I don’t think so, right? It may be sound strange, but there is a place where you can.
WHAT
Restaurant Carcasse in Belgium (Koksijde) is diffrent from the normal restaurants we know. From your table, you have a perfect view of the kitchen and the showcases where big meat hunks are hanging. It looks like they are just pulled of the animal and are ready to be served to you. The owner of Carcasse, Hendrik van Dierendonck, sees it as a form of art. But I wonder if everyone thinks like that. Carcasse is claimed to be a heaven for meatlovers, Everything revolves around the delicious taste of meat and the ‘out of the box’ dishes. Another thing what makes the restaurant special is that you are sitting with other people on a larger table, that way you can share you’re thoughts about food en your experience.
WHY
This is a example of Transparency. We more and more want to know where our food is from and if it’s the real meat or just pooled leftovers claimed to be meat. In this restaurant you can literally see where your meat is coming from. You are also sharing your thoughts and experiences with the people surround you.
Carcasse is a unique restaurant in his kind and I’m curious if we are going to see more of these. I would like to try a dish in Carcasse, even if it where only for the experience. Would you?
